If you run a restaurant, cloud kitchen or QSR in India, your FSSAI inspection will almost always start at the same place: the doors. Open entrances are the number-one route for flies, and inspectors know it. What FSSAI actually requires at doors and openings
The hygiene requirements for food businesses come from Schedule 4 of the FSS (Licensing and Registration of Food Businesses) Regulations, 2011, and FSSAI's guidance documents for the catering sector. The intent is simple: your premises must prevent the entry of pests, and openings are the weak point. In practice, FSSAI guidance asks for doors fitted with automatic closing springs, strips or air curtains, and windows and other openings protected with insect-proof screens.
Note the wording: FSSAI does not name one specific brand or device as "mandatory". What it demands is a working pest-entry barrier at every opening. Sizing quick-reference
- Match the door width, never less. A 3-ft door needs a 3-ft (900 mm) unit; a standard double door needs 5–6 ft. The air sheet must cover edge to edge.
- Mounting height: standard commercial units work up to about 2.5–3 m. Above that you need an industrial unit with higher discharge velocity.
- Velocity at the floor is what stops flies — roughly 2.5 m/s at floor level for a restaurant doorway.

Insect killer placement rules (this is where audits fail)
